Abstract

The global food system had undergone dramatic changes in recent years. Rapid urbanisation, sedentary lifestyles and higher incomes have resulted in a shift towards less healthy dietary habits. Consumers today are also placing greater value on convenience and are less likely to prepare meals with fresh ingredients at home — as a result, they rely largely on pre-packaged foods, ordering out or eating out.
